Masala French fries are a flavorful twist on classic fries, coated in a blend of spices that make them irresistible. Perfect as a snack or party appetizer, these fries are easy to make and always a crowd favorite.

Ingredients

  • 4 large potatoes, peeled and cut into thick strips
  • 3 tbsp cornflour
  • 1/2 tsp red chili powder
  • 1/2 tsp paprika (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin powder
  • 1/2 tsp chaat masala
  • 1/4 tsp black pepper powder
  • Salt, to taste
  • Oil, for deep frying
  • Fresh coriander leaves, chopped

Instructions

1. Prepare the Potatoes

  1. Peel the potatoes and cut them into thick strips or wedges.
  2. Rinse the cut potatoes in cold water to remove excess starch and pat them dry with a kitchen towel.

2. Parboil the Potatoes

  1. Boil water in a large pot and add the potato strips. Parboil them for 3-4 minutes.
  2. Drain the potatoes and spread them out on a kitchen towel to dry completely.

3. Coat the Potatoes

  1. In a bowl, mix cornflour, red chili powder, paprika (if using), garlic powder, cumin powder,
  2. Fresh coriander leaves, chopped and salt.
  3. Toss the dried potato strips in this mixture, ensuring they are evenly coated.

4. Fry the Potatoes

  1. Heat oil in a deep frying pan or wok over medium-high heat.
  2. Fry the coated potato strips in batches, making sure not to overcrowd the pan.
  3. Fry until the potatoes turn golden and crispy, about 6-8 minutes.
  4. Remove the fries with a slotted spoon and place them on paper towels to drain excess oil.

5. Add Masala and Serve

  1. Sprinkle chaat masala and black pepper over the hot fries and toss well.
  2. Garnish with chopped coriander leaves, if desired.
  3. Serve immediately with ketchup, mayonnaise, or your favorite dip.

Tips

  • Double-fry the potatoes for extra crispiness. Fry them lightly the first time, let them cool, and fry again until golden.
  • Adjust the spice level by increasing or reducing the red chili powder and paprika.
  • For a healthier version, bake or air-fry the coated potatoes instead of deep frying.
