Easy Egg Fried Rice Recipe – A Quick and Flavorful Delight

Egg Fried Rice is a simple yet delicious Indo-Chinese dish made with fluffy rice, scrambled eggs, and a mix of flavorful seasonings. Perfect as a main dish or a side, this quick recipe is great for lunch, dinner, or a snack.

Ingredients

  • 2 cups cooked basmati rice (preferably day-old rice)
  • 3 eggs, beaten
  • 2 tbsp oil
  • 1/2 cup spring onions, chopped
  • 1 small onion, finely chopped
  • 1/2 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 tbsp vinegar
  • 1/2 tsp black pepper powder
  • 1/2 tsp salt (adjust to taste)
  • 1 tsp red chili sauce (optional)
  • Spring onions, chopped, for garnish

Instructions

1. Scramble the Eggs

  1. Heat 1 tbsp oil in a wok or pan over medium heat.
  2. Add the beaten eggs and scramble them until fully cooked. Remove and set aside.

2. Sauté the Vegetables

  1. In the same pan, add 1 tbsp oil. Add garlic and sauté for a few seconds until fragrant.
  2. Add chopped onions and stir-fry for 1 minute.
  3. Add the mixed vegetables and cook for 2-3 minutes until slightly tender but still crisp.

3. Add the Rice and Sauces

  1. Add the cooked rice to the pan and toss everything together.
  2. Pour in soy sauce, vinegar, red chili sauce (if using), black pepper powder, and salt. Stir well to coat the rice evenly.

4. Add the Scrambled Eggs

  1. Add the scrambled eggs back into the pan and mix gently with the rice.
  2. Cook for another 2 minutes, stirring occasionally.

5. Garnish and Serve

  1. Garnish with chopped spring onions and half fry egg.
  2. Serve hot with your favorite Indo-Chinese dishes like Manchurian or chili chicken.
